Chef's Corner 2 cups flour 2 tbsp brown sugar 1 tbsp white sugar 2 tsp baking powder 1/2 tsp salt 1 cup pumpkin puree 1 tsp cinnamon 1/2 tsp ginger 1 egg 1 1/2 cups milk 2 tbsp vegetable oil 2 tbsp lemon juice Combine dry ingredients together in a mixing bowl. In a separate bowl combine pumpkin, egg, milk, oil and lemon. add flour mixture and stir until just moistened. Pour batter onto an oiled skillet 1/4 cup at a time. Cook pancakes on both sides until golden brown. |
