March Chef’s Corner Chef Bruce’s Guinness Corned Beef & Cabbage In the spirit of St.Patrick's Day, we have decided to go with a fun traditional Irish recipe! Enjoy! 1 cup brown sugar 1 can (approx. 12 oz) Guinness beer ½ cabbage (sliced) 1 cup water Salt and pepper Preheat oven to 300 degrees F. Rinse beef brisket and pat dry. Place chopped onion and carrot on the bottom of a roasting pan. Coat the beef with the brown sugar, including the bottom. Place the beef in your roasting pan and spread the sliced cabbage around it, pour in the Guinness beer and water into the pan and on the beef so the sugar is damp. Cover and bake for 2 1/2 hours. Allow to rest for 5 minutes before slicing. |
