February Chef's Corner - Southwestern Style Tequila Prawns

February Chef's Corner
Chef Perry’s Southwestern Style Tequila Prawns

6 or 8 large prawns 
1 tomato, chopped
½ white onion, chopped
½ red, ½ green pepper
1 tsp butter or olive oil
Cilantro to taste
Salt and pepper
Splash of tequila
Squeeze of lime

In a medium sauce pan add butter or olive oil . Sautee onions, tomato, peppers and prawns. Add cilantro, salt & pepper to taste. Finish with tequila  & lime juice   Serve over your favorite rice & enjoy!
